We, at TIC Gums, have a lot of recipes that we have developed over the years, including gold standard recipes that we would be able to share with you. We could also directly work with you if you have a specific formula that you are looking to develop.
I have seen a lot of truffle items too. We didn't make it to the Fancy Food show but are attending the RCA show in Phoenix in March. Anxious to see what is shown there.

Thanks for the comment. It will depend on the destination of the product. In the United States, xanthan gum is considered all natural. However, in Canada it is not. We offer many products for texture and stabilization that are ceritifed 100% organic. We have many more that meet 95% organic. And still quite a bit more that are all natural depending on your application and desired functions. We consider our products all natural if they are minimally processed and are derived from natural sources. If there is a modification or if an ingredient that we used is not considered all natural of course we then do not consider all natural. I would be happy to continue this discussion if I didn't go into enough detail.
